The grapes are harvested at the perfect moment and undergo cold maceration at 14°C for a few days after destemming, allowing the extraction of the best color and aroma compounds. Fermentation takes place under controlled conditions, and the resulting young wine is then dealcoholized using a low-temperature and high-pressure process, where ethanol is turned into vapor and removed. Following dealcoholization, part of the wine is aged in French oak barrels for 4-6 months, adding structure and harmony to its profile.
